Crispy and smooth with a tender, crunchy sweet flavour, baby bok choy is one of the best vegetables on the market. In a stir-fry or steamed with an Asian sauce, bok choy is a perfect accompaniment. Bok choy is an excellent source of vitamin C, vitamin K, vitamin A, and beta-carotene. It is a very good source of folate, calcium, and vitamin B6 as well.
